Prepare to ascend to great heights as we experience El Nevado del Huila, a majestic communal-lot sourced primarily from producers in the captivating areas around Santa Maria and Pitalito, nestled amidst the breathtaking landscapes of Northern and Southern Huila. But what makes this coffee truly remarkable goes far beyond its geographical origin – it is intricately intertwined with the towering Nevado del Huila, Colombia’s highest volcano, reaching an astounding elevation of nearly 5,500 meters or 18,000 feet!

The creation of El Nevado del Huila is an art form that embraces precision and excellence. Each small lot undergoes a meticulous selection process, with individual cuppings performed multiple times before being seamlessly integrated into the main lot. Quality is paramount, and only coffees that meet strict cupping standards make the cut. The journey begins when the producer presents a sample at one of our buying stations, where the first evaluation takes place. Upon approval, the lot continues its expedition to the warehouse, where it endures yet another round of cupping.

Here, samples are meticulously extracted from each sack, ensuring consistency throughout the entire lot. Finally, upon receiving final approval, the parchment coffee is packed in grain-pro, remaining untouched until the milling process begins. 

This decaffeinated coffee was processed at Descafecol, a company based on the outskirts of the town of Manizales, Colombia. The process for decaffeination begins with sugarcane grown a few hours south of Manizales. The sugarcane is processed into molasses, which is then fermented to create ethanol, and subsequently processed with acetic acid to create ethyl acetate. Green coffee is put into tanks and steamed to open up the coffee’s chemical structure and enable the extraction of the caffeine molecules. The steamed coffee is then soaked in ethyl acetate solution multiple times, during which the caffeine molecules bond with the ethyl acetate and are ultimately removed and washed away with the solution. This process removes a minimum of 97% of the caffeine. After the extraction process, the coffee is steamed once more to remove any remaining traces of the ethyl acetate solution, and then sent to dryers to bring the coffee back down to its original moisture content.
