What a lovely and unique lot from Wilson Alba this year. Very rarely do we get to experience Pacamara done so well. It's a volatile and finnicky variety, but when it's good, it's very good. This one hits the mark with a complex and layered acidity ranging from ruby beets to green apples. There is a berry tart aspect ushered in with a thrush of sweet & silky florals. This Pacamara is a very unique character all it's own, with a botanical complexity and a delicate citric structure.
Pacamara is a hybrid variety of Pacas and Maragogipe. Maragogipe produces a big seed, thus Pacamara gained those bulky cherry genetics. This variety came out of El Salvador, it is seldom see grown elsewhere. Luckily we get it from some of the best farmers in Colombia (the Alba brothers). This variety is difficult to find in great form post harvest, it is succeptible to berry disease, leaf rust and nematodes. That said, the cup potential is incredibly high. Pacamara is exceptionally great when executed carefully at high elevations with the utmost professional care. This is the case with this very small harvest.
Wilson Alba has lived and worked with his brother Jose on the farm Sierra Morena for the last 15+ years. The farm is eight hectares (~20 acres) in total. Two hectares are planted with Pink Bourbon, and the most of it is planted with Tabi with very little of the farm producing Pacamara. We got the only bag produced this year! This farm consistently produces some of the best coffees we taste out of the entire region of Southern Huila, and it is an honor to roast and work with Wilson's coffees.
Our coffees are best after two weeks+ of the roast date.
Roasted on Mondays and shipped the following day.
