Mario Moreno has delievered a classic representation of the Bourbon variety out of Finca Piedras Amarillas. This year's 100% Bourbon lot is well balanced, medium sweet with a smooth body. Mario's coffee has a nice weighted texture with a rich tenor of stone fruit.
Mario is the son of Don Daniel Moreno, a legendary producer. Mario has continued the family's legacy with progressing the processing details to an exact science. The coffee is fermented for up to 24hr.s then washed four times over. The coffee is dried on raised beds, whilst further removing defects. It is then moved to a solar dryer with shade for 10-15 days, moved every 30-60 minutes to ensure even drying. This kind of attention to detail ensures the stability and consistency in green coffee that makes for high-end specialty coffee. It definitely helps with the longevity and vibrancy of the coffee post harvest. I hope you enjoy this one as much as we do.
