This Pink Bourbon from Don Edwin Carvajal has a weighted sugar character, orange acidity & mango-like viscosity. Overall, the profile is balanced leaning sweet. A rich and tropical styled PinkB. Bigger bodied, red & yellow fruit with ripe-fruit aromatics.
Finca Santa Librada is located in the Vereda Santa Librada, in Santa María, Huila, Colombia, and is managed by Edwin Carvajal, a 44-year-old, second-generation coffee grower. The farm consists of 39 hectares/96 acres of land, with 12 hectares dedicated to growing coffee. It sits at an elevation of 1,900 meters/6,200 feet, and with around 30,000 coffee trees in production.
Edwin’s lots start by handpicking the ripest cherries, de-pulping, and then leaving them in sealed barrels to ferment for 5 days. The parchment is then washed and placed to dry on raised beds for 15 – 20 days, depending on the weather. The 5-day ferment has pushed the cherry-pulp impartation to the max whilst still leaving room for delicate acidities and cherry nuances to shine.
This lot is a competition winner and one that stood out to us among so many great coffees from Huila, Colombia. It appeals to the senses for use as espresso, filter and an overall ease of brewing.
