Our first ever honey process coffee has arrived! Qonqana producers have executed an esquisite example of cleanliness that is possible with the honey process. In the cup you will find an array of wild aromatics from crushed berry, citrus blossom to bright oolong. The body is smooth, rounded and soft with saccarine sesnibilities. The clarity of the cup amplifies the nuance of the region and the isolated varieties now identified as 74110 & 74112.

This coffee cupped so well among the best of the best washed Ethiopian lots this year, it could not be denied. With just over a 1,000 farmers working together on this lot, the standards are high. The Honey lot is de-pulped and immediately placed to dry on raised beds, with continuous movement over the course of 15-20 days for a uniform drying. Qonqana's honey process is done carefully & systematically, the results make for an even and consistent green coffee. This makes for a thurough and consistent roast profile. Big ups to Manager Asefa Dukamo Korma for overseeing the honey process and logistics of Qonqana.

 Roasted Monday, October 2nd.

Our coffees are best cupped/brewed 2weeks+ post roast date.
